Pumpkin Pie
(I am not sure how different or the same this recipe is for Pumpkin Pie but it is the only one we have ever used)

1 Pie shell (we use the frozen ones)
3 eggs, slightly beaten
1 cup of sugar
1/2 teaspoon of salt (or  a pinch of salt)
1 teaspoon of Cinnamon
1/4 teaspoon of cloves
1/4 teaspoon of nutmeg
1/4 teaspoon of ginger
1 can (15 ounce) pumpkin
1 cup of Evaporated milk


Instead of using the spices separately we used the Pumpkin Pie Spice!

Heat oven to 450
Combine spices, eggs and sugar. BEAT WELL
Add in Pumpkin and Milk BEAT WELL
Pour Mix into Pie Shell
Bake at 450 for 10 minutes
Reduce heat to 350 and bake for 40-45 minutes.
Check to see if pie is done when a toothpick is stuck in the middle and comes out clean

Store in the fridge.

Pumpkin Pie is great topped with Cool Whip!!

Want an easy, two ingredient cake?
Well I have the perfect one for you!!

All you need is:
1 Box of Angel Food Cake Mix
1 Large Can of Crushed Pineapple in its own Juice

Mix the 2 ingredients together bake at 350 for 30 minutes or until cake is done. The top will be lightly, golden brown
Top with a little cool whip, if you like and Enjoy!!
 
One of my FAVORITE pies would have to be Chocolate Pudding Pie. Though it is so easy, it is so good!!
All you need to make this is a LG box of Chocolate Pudding, Milk, Pie Crust, and Cool Whip

Make the pudding according to the "pie" recipe on the box
Pour into pie crust (can back crust if you want a crunchy crust)
Put into fridge for at least 4 hours or until set

Then enjoy!!
After you have cut your piece is when you can add the cool whip or you can top it with it before putting it up to set!!

This is such an easy pie and so delicious and goes great with any meal!! We have this on Thanksgiving, Christmas, Easter and Just Because!!!
 
Todays Recipe is Coconut Cake. This recipe did not come from my nanny, but it came from her sister. And let me tell you it is delicious!!
You need:
White or Yellow Cake mix + ingredients to make the cake
Coconut Milk
1 Can Sweetened Condensed Milk
2 Bags of Frozen Coconut
1 Tub of Cool Whip

Bake the cake as directed on the box.
Once the cake comes out of the oven, allow it to cool
Then Poke Large Wholes in the cake
Pour the can of Sweetened Condensed Milk over the entire cake.
Then pour 1 can (using the milk can) of Coconut Milk over the cake
After you have added both types of Milk Top with Cool Whip
And on top of the cool whip add the coconut, you can add as much or as little coconut you want on top and the same goes with the cool whip.

Let the cake sit in the refrigerator for a few hours before eating
Then ENJOY!!
 
If you are anything like I am, you love to stay in doors on rainy days!!
On cool, rainy days, I can remember my Nanny making a huge pot of Chili or Potato Soup. To this day I love to have a bowl of potato soup or chili when it is raining outside.

Incase you are wondering there is a simple way to make a small pot of chili to enjoy just 4-6 hours after putting it together. All you need is:
1/2 a pack of the small hamburger meat or ground turkey- COOKED
2 cans of seasoned chili beans
1 can of diced tomatoes- I do not like tomatoes in chili so I only used half a can
1/2 pack of McCormick chili seasoning
Chopped bell peppers and onions
Salt and pepper

Mix those ingredients together, put in a crockpot and cook on low for 4-6 hours or you can cook this on your stove top. The longer chili cooks the better it tastes.

I made a pot of chili like this the other week and it was fantastic!! I used the ground turkey when I made it

Chili is a great, versatile meal. You can make it with ground beef or turkey. You can add vegetables to it if you please. You can also add or subtract the amount of meat, beans or tomatoes you add to the pot.
Once it is finished cooking you can top it with crackers, fritos, cheese or sour cream!

The first dish my Nanny taught me to cook was Homemade Macaroni and Cheese.
Every time I prepare this dish it turns out different.
It is very simple to prepare and it is very customizable.

My favorite cheese to use in this dish is sharp and sometimes extra sharp cheese but you can use other types of cheese.
 To customize this dish you can substitute different cheese; for example you can use mozzarella cheese in place of the cheddar cheese.
