Pumpkin Pie
(I am not sure how different or the same this recipe is for Pumpkin Pie but it is the only one we have ever used)

1 Pie shell (we use the frozen ones)
3 eggs, slightly beaten
1 cup of sugar
1/2 teaspoon of salt (or  a pinch of salt)
1 teaspoon of Cinnamon
1/4 teaspoon of cloves
1/4 teaspoon of nutmeg
1/4 teaspoon of ginger
1 can (15 ounce) pumpkin
1 cup of Evaporated milk


Instead of using the spices separately we used the Pumpkin Pie Spice!

Heat oven to 450
Combine spices, eggs and sugar. BEAT WELL
Add in Pumpkin and Milk BEAT WELL
Pour Mix into Pie Shell
Bake at 450 for 10 minutes
Reduce heat to 350 and bake for 40-45 minutes.
Check to see if pie is done when a toothpick is stuck in the middle and comes out clean

Store in the fridge.

Pumpkin Pie is great topped with Cool Whip!!

With Thanksgiving just 2 days away, what are some of your favorite Thanksgiving traditions?

Mine begin on Wednesday, the day before Thanksgiving, my cousins and I go to our Nanny and PA's house to start preparing food for Thursday. We get everything ready on Wednesday so Thursday morning the food can be put into the oven and ready by lunch. This is something we have done for the last 10 years or so and it is something we all treasure, not to mention, us girls all know how to cook!!

On Thanksgiving Day, we all go to Nanny's house and spend most of the day over there eating and having a good time. All the guys watch football, and if the weather is nice, we tend to go outside, but this year I have a feeling its not going to be very nice outside...

Want an easy, two ingredient cake?
Well I have the perfect one for you!!

All you need is:
1 Box of Angel Food Cake Mix
1 Large Can of Crushed Pineapple in its own Juice

Mix the 2 ingredients together bake at 350 for 30 minutes or until cake is done. The top will be lightly, golden brown
Top with a little cool whip, if you like and Enjoy!!
 
One of my FAVORITE pies would have to be Chocolate Pudding Pie. Though it is so easy, it is so good!!
All you need to make this is a LG box of Chocolate Pudding, Milk, Pie Crust, and Cool Whip

Make the pudding according to the "pie" recipe on the box
Pour into pie crust (can back crust if you want a crunchy crust)
Put into fridge for at least 4 hours or until set

Then enjoy!!
After you have cut your piece is when you can add the cool whip or you can top it with it before putting it up to set!!

This is such an easy pie and so delicious and goes great with any meal!! We have this on Thanksgiving, Christmas, Easter and Just Because!!!
 
Todays Recipe is Coconut Cake. This recipe did not come from my nanny, but it came from her sister. And let me tell you it is delicious!!
You need:
White or Yellow Cake mix + ingredients to make the cake
Coconut Milk
1 Can Sweetened Condensed Milk
2 Bags of Frozen Coconut
1 Tub of Cool Whip

Bake the cake as directed on the box.
Once the cake comes out of the oven, allow it to cool
Then Poke Large Wholes in the cake
Pour the can of Sweetened Condensed Milk over the entire cake.
Then pour 1 can (using the milk can) of Coconut Milk over the cake
After you have added both types of Milk Top with Cool Whip
And on top of the cool whip add the coconut, you can add as much or as little coconut you want on top and the same goes with the cool whip.

Let the cake sit in the refrigerator for a few hours before eating
Then ENJOY!!
 
How do you warm up on cold days?

Other than bundling and layering on clothes one of my favorite things to do to warm up on a cold day, like today, would be to drink Hot Chocolate or Hot tea?
My favorite Hot Tea is Peppermint tea with Honey!!
Do you have a favorite hot tea or type of Chocolate?

Another favorite of mine is a bowl of Potato soup with cheese and bacon bits..Yummy!!

 
Todays Recipe is for SWEET POTATO PIE!!

Ingredients:
2 Cups of Sweet Potato
1/4 Cup of Butter
3 Eggs
1 Cup of Milk
1 1/4 Cup of Sugar
1/4 teaspoon of salt
1 teaspoon of Vanilla


Directions:
Bake Pie for 15 minutes on 425 degrees
Then reduce the heat, after 15 minutes, to 350 degrees and continue baking the pie for 45 minutes

Sometimes its the simple, easy things that can make any day great.

Today for lunch instead of going out, we decided to cook at home.

Today's lunch consists of Ravioli with Vodka Pasta Sauce.

All you need for this is 3 simple ingredients:
1 bag of frozen ravioli (you can get cheese or beef ravioli)
1 Can of Vodka Pasta Sauce (any brand will do)
Parmesan Cheese (Use Desired Amount, or none at all)


This is the easiest dish you will ever cook. 
Cook the ravioli according to the package and then add the sauce and heat it all together and top with cheese. 

You can do different things with this though:
1. You can boil the ravioli and top with the sauce
2. You can bake the ravioli (after boiling it) and layer it with sauce in a baking dish (like lasagna)
3. You can cook it on low all day in the sauce in a crockpot
4. You can add chicken or any type of meat to the dish
5. You can switch up the type of sauce and cheese you put on it. 
With this extremely easy meal you can do a lot of different things to satisfy any crowd!!

Want an easy lunch or dinner that does not take long to cook?
Then this recipe is for you!

Boil as much rice as you desire or by the serving suggestion on the back of the bag.
Boil 2-4 chicken breasts
1/2 can of peas and carrots mixed
Soy sauce

Once the rice and chicken is cooked
Put it in a skillet with the peas and carrots.
Then add soy sauce until you are satisfied with how it tastes.

This is a recipe that you can adjust as you cook it to accommodate how many servings you need.

I got this Recipe from a really good friend of mine!
It is one of his favorite, easy recipes!!

You need just a few simple ingredients to create this amazing main dish.

All you need is:
Olive Oil
Minced Onion
Chicken Breast
Parmesan Cheese
Bread Crumbs

Put about 1/2 a cup of olive oil with a dash or two of the minced onion in a bowl
Put equal parts parmesan cheese and bread crumbs on a plate and mix together
Coat your chicken in the olive oil/onion mixture and then cover the chicken in the bread crumb mix

Put the chicken on a baking sheet and put into a preheated 400 degree oven. Bake for 15 minutes and then turn the chicken over and bake for 10 more minutes or until the chicken is done!
